tomato soup cake
2 cups flour
1-1/3 cups sugar
4 teaspoons baking powder
2 teaspoons pumpkin pie spice
1/2 teaspoon cloves
1 teaspoon baking soda
1 can (10.75 oz) tomato soup (like campbell’s)
1/2 cup olive oil (or canola or sunflower)
2 eggs
1/4 cup water

preheat oven to 350 degrees F
spray a bundt pan with non-stick cooking spray
dump all ingredients into a mixing bowl
mix for 1 minute on low speed, then for 4 minutes on high speed
pour batter into bundt pan
bake for 50 minutes or until a cake tester comes out clean (your oven, your mileage may vary)
let cake cool on wire rack for 20 minutes before removing it from bundt pan
frost with buttercream or cream cheese icing
this makes a nice spice cake; you would NEVER guess the secret ingredient (the tomato soup) because you cannot taste it!

DeleteFirst time I've heard of pumpkin pie spice. Whatever can it be? What would happen it I took a teaspoon raw?
ReplyDelete"pumpkin pie spice" is a combination of cinnamon, nutmeg, ginger, and allspice. I would not eat it raw if I were you, noble ape.

DeleteI have stored this recipe for future use. I got it from Larry Muffin. It's a tad hot this month to turn on the oven. I'll be taking you up on this challenge soon. We could turn this into a traveling shirt show....show me the cake baby.

and I like the idea (however impractical) of a traveling cake.

DeleteI've had that cake before and it was crazy tasty! But I learned not to tell people it had tomato soup in it, cause some people wont eat it then!

DeleteI make lasagna with ground turkey; I make pasta and meatballs with turkey meatballs. people have eaten both and never tasted the difference!
